Falafel Burgers with Tzatziki
HOW TO MAKE THE TZATZIKI
1/2 cucumber, peeled and chopped
1/2 cup yogurt
1 or 2 cloves of garlic, minced
1/2 Tbsp dill, chopped
1 Tbsp olive oil
3/4 Tbsp lemon juice
salt and pepper to taste
Combine and chill for an hour in the fridge.
FALAFEL BURGERS
In a food processor, combine
1 can chickpeas
2 cloves garlic
2 tsp cumin
1/2 tsp chili powder
1 tsp coriander
1/4 tsp salt
1/4 tsp pepper
squirt of hot sauce
1 Tbsp flour
1 Tbsp honey
optional: handful of cilantro
Form mixture into four patties, brush with olive oil, and bake on an oiled pan or parchment paper at 400 degrees for thirty minutes.
Serve on a bun with the tzatziki, and slices of tomato and red onion.
Cost per serving: $0.90
so nobody else goes through the horror… smoosh the garlic flat with the knife, chop then.
